La TORTA PASQUALINA è una torta salata tipica della cucina ligure (= della Liguria) che viene preparata soprattutto in occasione della tipica gita di Pasquetta, perché si può gustare sia fredda che calda ed è perfetta da portare con sé per un pic-nic! Questa è la RICETTA TRADIZIONALE per preparare la torta pasqualina!

  • Spinaci già puliti 1,5 kg
  • Uova medie 12
  • Cipolle  1/2
  • Noce moscata q.b.
  • Sale fino q.b.
  • Ricotta vaccina 500 g
  • Parmigiano Reggiano DOP da grattugiare 190 g
  • Maggiorana 3 rametti
  • Olio extravergine d’oliva 25 ml

PER LE SFOGLIE

  • Farina 00 600 g
  • Olio extravergine d’oliva 35 ml
  • Acqua circa 350 ml 
  • Sale fino 1 pizzico

  • Extra virgin olive oil 35 ml
  • Water about 350 ml
  • Fine salt 1 pinch

Preparazione della pasta sfoglia

  • La prima cosa da fare per realizzare la torta pasqualina è preparare l’impasto per le sfoglie che dovranno essere quattro; due serviranno per foderare la base della tortiera e due per ricoprire il ricco ripieno.
  • Sciogliete il sale nell’acqua, e in una ciotola capiente mettete la farina e versate l’acqua, quindi aggiungete anche l’olio e cominciate a lavorare l’impasto all’interno della ciotola; se necessario potete aiutarvi con un tarocco.
  • Quando avrete raccolto tutti gli ingredienti trasferite l’impasto su una spianatoia leggermente infarinata e continuate a lavorarlo per qualche minuto con le mani finché diventerà liscio ed elastico, dopodiché suddividetelo in 4 panetti: 2 più grandi, del peso di circa 300 g, e 2 più piccoli, del peso di circa 180 g.
  • Copriteli con un canovaccio leggermente inumidito e lasciateli riposare per circa un’ora in un luogo fresco.

Preparation of the puff pastry

  • The first thing to do in order to make the torta pasqualina is to prepare the dough for the puff pastry, and you’ll need four sheets; two will be used to line the base of the cake pan and two to cover the rich filling.
  • Dissolve the salt in the water, and in a large bowl place the flour and pour in the water, then add the oil and begin to knead the dough inside the bowl; if necessary you can help with a corkscrew.
  • When you have mixed all the ingredients, transfer the dough onto a lightly floured pastry board and continue to knead it for a few minutes with your hands until it becomes smooth and elastic, then divide it into 4 portions: 2 larger ones, weighing about 300 g, and 2 smaller ones, weighing about 180 g.
  • Cover them with a slightly dampened cloth and let them rest for about an hour in a cool place.

Preparazione del ripieno

  • Fate appassire le bietole o gli spinaci (noi abbiamo usato gli spinaci) in una padella insieme all’olio e alla cipolla tritata.
  • Salate, pepate e fate insaporire per qualche minuto, quindi spegnete il fuoco.
  • Una volta che la verdura si sarà intiepidita, lasciatela scolare in un colino, poi sminuzzatela su un tagliere e trasferitela in una ciotola. Aggiungete uova, 50 g di formaggio grattugiato, le foglioline tritate di maggiorana fresca, salate, pepate e amalgamate bene il tutto.
  • In un’altra ciotola mettete la ricotta, lavoratela con un cucchiaio o con una frusta per ammorbidirla e aggiungete 3 uova; mescolate per incorporare le uova e aggiungete 90 g di formaggio grattugiato, la spolverata di noce moscata e un pizzico di sale, poi mescolate bene servendovi di una frusta in modo che il composto risulti piuttosto cremoso e senza grumi.

Preparation of the filling

  • Wilt the chard or spinach (we used spinach) in a skillet along with the oil and chopped onion.
  • Season with salt and pepper and cook for a few minutes, then turn off the heat.
  • Once the vegetables have cooled, let them drain in a colander, then chop them up on a cutting board and transfer them to a bowl. 
  • Add eggs, 50 g of grated cheese, chopped fresh marjoram leaves, salt and pepper and mix well.
  • In another bowl, put the ricotta, work it with a spoon or a whisk to soften it and add 3 eggs; mix to incorporate the eggs and add 90 g of grated cheese, the sprinkling of nutmeg and a pinch of salt, then mix well using a whisk so that the mixture is quite creamy and without lumps.

Preparazione della torta

  • Prendete uno dei panetti da 300 g e tiratelo con il mattarello fino a farlo diventare una sfoglia sottilissima, allargatela con le mani e disponetela sul fondo di una tortiera del diametro di 30 cm che avrete precedentemente spennellato con l’olio.
  • Anche in questa fase allargatela bene con le mani e fatela aderire perfettamente anche ai bordi della tortiera; non preoccupatevi se la sfoglia fuoriesce dalla teglia perché questa è una caratteristica propria della torta pasqualina.
  • Spennellate la sfoglia con l’olio, prendete il secondo panetto da 300 g, tirate anch’esso con il mattarello e disponetelo sopra alla prima sfoglia facendola aderire bene.
  • A questo punto aggiungete il composto di verdura, livellandolo bene con il dorso di un cucchiaio poi versateci sopra la crema di ricotta e livellate anch’essa.
  • Con il dorso di un cucchiaio praticate sette conche, una al centro e sei laterali, e all’interno di queste conche adagiate i tuorli delle 7 uova rimaste, facendo attenzione a non romperli.
  • Sbattete leggermente i 7 bianchi d’uovo avanzati con un pizzico di sale e versateli per ricoprire la superficie di ricotta.
  • Cospargete la torta pasqualina con il parmigiano rimasto, dopodiché stendete uno dei panetti da 180 g e coprite il ripieno con la terza sfoglia, che sarà più piccola rispetto alle due precedenti; ancora una volta fatela aderire bene alla teglia.
  • Spennellate anche questa sfoglia con l’olio, dopodiché tirate l’ultima sfoglia e coprite il tutto facendo aderire bene la sfoglia come in precedenza.
  • Quindi tagliate la pasta che ricade eccessivamente sui bordi con un coltellino e ripiegatela verso l’interno della tortiera in modo da formare un cordoncino che sigillerà le sfoglie.
  • Spennellate con l’olio la superficie della torta pasqualina e come ultima operazione appiattite bene i bordi con i rebbi di una forchetta, così da formare anche un bel motivo decorativo. 

  • Ora non vi resta che infornare la torta pasqualina in forno già caldo nel ripiano più basso a 180 gradi per 55 minuti (in forno ventilato a 160 gradi per 45 minuti). 

  • A cottura ultimata sfornate la torta pasqualina e prima di toglierla dalla teglia lasciatela intiepidire. Una volta tagliata otterrete delle fette in cui si vedranno chiaramente lo strato di spinaci e di crema alla ricotta nonché i tuorli d’uovo che risulteranno sodi e compatti. Ecco la torta pasqualina pronta per la vostra scampagnata di Pasquetta!

Preparation of the cake

  • Take one of the 300 g portion and roll it out with a rolling pin until it becomes a very thin sheet, spread it out with your hands and place it on the bottom of a cake pan with a diameter of 30 cm that you have previously brushed with oil.
  • Also at this stage, spread it well with your hands and make it adhere perfectly to the edges of the cake pan; do not worry if the pastry comes out of the pan because this is a characteristic of the torta pasqualina.
  • Brush the pastry with oil, take the second 300 g portion, roll it out with the rolling pin and place it on top of the first pastry, making it stick well.
  • At this point add the vegetable mixture, leveling it well with the back of a spoon, then pour over the ricotta cream and level it as well.
  • With the back of a spoon, make seven hollows, one in the center and six on the sides, and inside these hollows place the yolks of the remaining 7 eggs, taking care not to break them.
  • Lightly beat the 7 leftover egg whites with a pinch of salt and pour them to coat the ricotta surface.
  • Sprinkle the pasqualina cake with the remaining parmesan cheese, then roll out one of the 180 g portion and cover the filling with the third sheet, which will be smaller than the two previous ones; once again make it adhere well to the pan.
  • Brush this pastry with oil, then roll out the last pastry and cover it all, making the pastry adhere well as before.
  • Then cut the pastry that falls too much on the edges with a small knife and fold it towards the inside of the cake tin to form a string that will seal the sheets.
  • Brush the surface of the torta pasqualina with oil and, as a last step, flatten the edges with the prongs of a fork, so as to form a nice decorative motif.
  • Now you just have to bake the torta pasqualina in a preheated oven on the lowest shelf at 180 degrees for 55 minutes (in a fan oven at 160 degrees for 45 minutes). 
  • When baked, take the torta pasqualina out of the oven and let it cool before removing it from the pan. Once cut you will get slices in which you can clearly see the layer of spinach and ricotta cream and egg yolks that will be firm and compact. Here is the torta pasqualina ready for your Easter Monday trip!
