- Pastry flour 500 g
- Butter room temperature 50 g
- Eggs (medium) 3
- Vanilla bean 1
- Salt 1 pinch
- Sugar 70 g
- Grappa* 30 g

Preparazione
- Per preparare le chiacchiere, setacciate la farina assieme al lievito e versate in una planetaria con foglia. Aggiungete lo zucchero, il sale, le uova sbattute in precedenza e la grappa. Lavorate fino ad amalgamare bene gli ingredienti.
- Sostituite la foglia con il gancio, unite i semi della bacca di vaniglia e il burro, quindi continuate ad impastare per 15 minuti fino ad ottenere un composto omogeneo: dovrà risultare compatto, ma abbastanza malleabile. Se necessario potete aggiungere 5/10 gr di acqua.Â
- Trasferite l’impasto su un piano di lavoro, e maneggiatelo rapidamente per dargli una forma sferica.
- Avvolgete il panetto con la pellicola trasparente e lasciatelo riposare a temperatura ambiente per almeno 30 minuti.Â
- Trascorso questo tempo, dividete la pasta in porzioni da 150 g circa e iniziate a lavorare ognuna singolarmente.Â
- Appiattite leggermente una prima porzione con il palmo della mano, infarinatela e stendetela con il tirapasta impostato sullo spessore più largo.
- Ripiegate verso il centro i lati corti della striscia di pasta ottenuta, dopodiché tiratela nuovamente impostando ogni volta il tirapasta su uno spessore sempre minore, fino a raggiungere i 2 mm.Â
- Eseguite lo stesso procedimento su tutte le porzioni di impasto.Â
- Lasciate riposare qualche minuto la sfoglia tirata e nel frattempo portate l’olio alla temperatura di 150-160°.Â
- Con una rotella a taglio smerlato procedete sagomando dei rettangoli di circa 5×10 cm e praticando su ognuno due tagli centrali, paralleli al lato lungo.
- Non appena l’olio ha raggiunto la giusta temperatura immergetevi 2-3 rettangoli di sfoglia con l’aiuto di una schiumarola e fateli cuocere rigirandoli su ambo i lati fino a che non raggiungono la doratura.Â
- Scolate le sfoglie su carta assorbente e, una volta fredde, impiattatele e cospargetele con abbondante zucchero a velo setacciato.
- Le vostre chiacchiere sono pronte!
- To prepare the chiacchiere, sift the flour together with the yeast and pour into a mixer with a leaf.
- Add the sugar, salt, previously beaten eggs and grappa. Work until the ingredients are well mixed.
- Replace the leaf with the dough hook, add the seeds of the vanilla bean and the butter, then continue to knead for 15 minutes until the mixture is smooth: it should be compact, but malleable enough. If necessary, you can add 5/10 gr of water.
- Transfer the dough on a work surface, and handle it quickly to give it a spherical shape.
- Wrap the dough with plastic wrap and let it rest at room temperature for at least 30 minutes.
- After this time, divide the dough into portions of about 150 g and start working each one individually.
- Slightly flatten a first portion with the palm of your hand, flour it and roll it out with a pasta machine with the widest thickness.
- Fold the short sides of the resulting strip of dough towards the center, then roll it out again, setting the pasta machine to a decreasing thickness each time, until you reach 2 mm.
- Perform the same procedure on all portions of dough.
- Let the rolled out dough rest for a few minutes and in the meantime bring the oil to a temperature of 150-160°.
- Using a fluted pastry wheel, shape rectangles of about 5×10 cm and make two central cuts in each, parallel to the long side.
- As soon as the oil has reached the right temperature, dip 2-3 rectangles in it with the help of a skimmer and cook them, turning them on both sides until they are golden brown.
- Drain the pastry on paper towel and, once cold, plate them and sprinkle them with plenty of sifted powdered sugar.
- Your chiacchiere are ready!
