Terrine gratinate di polenta e funghi porcini

Two layers of polenta hide a fine, stringy filling of porcini mushrooms and mild scamorza cheese; lightly topped with a thin, seductive crust.

  • Per preparare le terrine di polenta e funghi porcini iniziate a realizzare proprio la polenta. In una pentola capiente versate l’acqua, aggiungete il sale grosso e un filo d’olio e portatela a bollore
  • Quindi versate la farina per polenta a pioggia poco alla volta e mescolate inizialmente con una frusta fino ad ottenere un composto privo di grumi.
  • Proseguite quindi mescolando la polenta con una spatola o con un cucchiaio di legno per amalgamarla bene
  • Quando la polenta sarà pronta, versatela su un vassoio (o una pirofila) foderato con carta da forno, e livellate la superficie. Dovrete ottenere uno spessore di circa 1 cm, quindi lasciate riposare a temperatura ambiente.
  • Nel frattempo dedicatevi alla pulizia dei funghi porcini: aiutandovi con un coltellino eliminate la terra in eccesso presente sul gambo e utilizzando un panno leggermente umido pulite l’intero fungo. A questo punto tagliate i porcini a fette, non troppo sottili.
  • Ponete in una padella l’olio e l’aglio, che farete dorare, poi aggiungete i funghi e lasciateli stufare per circa 8-10 minuti; dopodiché salate, pepate, togliete l’aglio e aggiungete le foglioline di timo. 
  • Una volta che la polenta sarà fredda tagliate la scamorza a cubetti e iniziate a comporre le terrine. Ungete il fondo della terrina e utilizzando un coppapasta intagliate 4 dischi di polenta da 7 cm e 4 da 8 cm. Componete le terrine posizionando il disco più piccolo sul fondo, poi i funghi porcini, la scamorza a cubetti e infine il disco più grande di polenta.
  • Ultimate le terrine con la scamorza rimasta e gratinate per circa 10 minuti in forno statico a 200° (se utilizzate il forno ventilato cuocete per circa 6 minuti a 180°). 
  • Sfornate e servite le terrine di polenta e funghi porcini ancora calde.

  • To prepare the terrines with polenta and porcini mushrooms, start making the polenta. Pour the water into a large saucepan, add the course salt and a dash of oil and bring to the boil. 
  • Then sprikle the corn flour gradually and mix with a whisk from the beginning until you get a smooth paste free from lumps.
  • Continue by stirring the polenta with a spatula or wooden spoon to blend them well. 
  • When the polenta is ready, put it on a tray (or an oven pan) covered with baking paper and smooth the surface. You should get a layer about 1 cm thick. Then let it rest at room temperature.
  • In the meantime, clean the porcini mushrooms: remove the soil from the stem with a small knife and clean the whole mushroom with a slightly damp cloth. Now cut the porcini into not too thin slices.
  • Put the oil and the garlic, which you brown, in a pan, then add the mushrooms and let them stew for about 8-10 minutes; then salt and pepper them, remove the garlic and add the thyme leaves. 
  • When the polenta is cold, cut the scamorza into small cubes and begin to arrange the terrines. Grease the bottom of the terrines and use a food ring mold to cut 4 round slices of polenta of 7 cm and 4 of 8 cm. Prepare the terrines by placing the smaller slice on the bottom, then add the porcini mushrooms and the diced scamorza cheese and finally place the larger slice of polenta on top.
  • To finish the terrines, put the remaining scamorza on top and bake for about 10 minutes at 200°C top/bottom heat (if you use the fan function, it is about 6 minutes at 180°C). 
  • Take them out of the oven and serve the terrines with polenta and porcini mushrooms while they are still warm.
